Yummy homemade pancakes!

Versatile, slightly butter-y, slightly sweet, light and fluffy… Pancakes are my second chocolate cake. It is one of the most uncomplicated recipe for breakfast (or whenever you like to have it) and can be paired with absolutely anything. Top them with cream or staple herchey’s or blueberry jam or black currant jam or peaches.. it practically goes with any flavour

I love making pancakes to
1. feel good about the lousy cook in me
2. To savour the pure, unconditional pleasure of biting into homemade pancakes.

So here’s how I made them yesterday and a day before that for two of my very special friends who came home for breakfast :

You need-

2 cups Flour

2 Large Eggs

1.5 Cup milk

1/2 teaspoon salt

3 Tablespoon Sugar

2 Tablespoon melted butter

2.5 teaspoon Baking powder

A few drops of Vanilla Essence (optional)

Fresh cream/ whipped cream (optional)

Other optional ingredients could be cinnamon or orange rind or lemon rind, whatever goes with your taste. I personally maintain some distance from cinnamon in my desserts.

So now, you just take two separate bowls.
Bowl 1- Mix Flour, Sugar, Baking powder and salt and keep it aside

Bowl 2- Break the two eggs and beat them (a nice beater makes a lot of difference). Slowly add the milk and melted butter and beat the mixture till its nice and frothy along with a few drops of vanilla essence.

Now slowly add the flour mixture into the egg mixture and beat until smooth. Add a little more milk if you find the consistency to be too thick.

The batter is ready. Now grease your non-stick pan with a little butter and add small amounts of batter and cook until they are golden brown in color.

For serving I lathered my pancakes with sweetened fresh cream and a dollop of strawberry sauce and chocolate sauce and voila! your weekend craving is fixed.
