3 Interesting, fresh spins on breakfasty eggs

If someone whispers this four lettered word into my ears, it can wake me up from the deepest slumber. And that is no mean feat for a sleep loving person like me.

Hard boiled, water poached, sunny side up, scrambled with cheese, fancy omelettes, devilled, I can consume eggs in any form or all of those put together on a lazy weekend breakfast buffet (gluttony was named after me!).

Eggs are the butter to my bread, the single-most consistent love of my life.

So I present to you my most favorite spin on eggs that will make your breakfast brighter and creamier and cheesier and snazzier and.. Okay I will stop now.

1. Eggs florentine – Crunchy toast, topped with a slice of chicken ham, beautiful wilted spinach crumbled with feta finished with a fried egg. Blend a smoothie on the side and you will never complain about a boring breakfast again. (Idea from this recipe)

2. Cheddar cheese scrambled eggs – This scramble is for that cheese loving person inside you. And like most things that call for cheese, be very generous with it.

You will need – 2 eggs, a couple of tablespoons of cream, half a cup of grated cheddar cheese, salt and pepper, italian seasoning, oregano. Serve with sausages and crunchy toast.

3. Mexican style scrambled eggs – I first saw this recipe on Nigella Lawson’s show and fell in love with the idea. Crispy pieces of tortilla, tomatoes, spring onions, chillies, this scramble gives a zingy mexican twist to your eggs and it is a meal in itself. I added some chopped chicken ham for extra thrills.

You will need – 1 large tomato – deseeded and chopped, chopped spring onions, a cup of chopped tortilla, 3 eggs, 1 tbsp of cream, seasoning. Fry the tortillas until crisp, remove and keep in a bowl. Now fry tomatoes and spring onions for a couple of minutes, add the seasoned and creamed egg and the tortilla, add chilli flakes and cook for 2-3 minutes. Serve with crunchy toast and fresh orange juice.

Phew. There are never enough reasons why we shouldn’t love eggs so much.
