Simple homemade granola


This recipe was featured in Deccan Chronicle newspaper as a part of healthy eating during the festive season. YAY!

I went through this phase where all I ate for breakfast was crunchy granola on whipped vanilla yoghurt with berries. For days together! That exact combination!

And I never got bored.
If only I knew then how easy it is to make granola on your own without selling a kidney for a store bought one (exaggerating a bit here)
Oh and the smell of freshly baked granola. Dear god! My Monday morning became glorious because of this recipe. I added some chopped hazelnuts, almonds that I had at hand and topped with a few nibs of dark chocolate. Yes, that is totally uncalled for. I am just obsessed with the combination of hazelnuts and chocolate. You can use your favourite assorted nuts, dried berries, raisins, whatever you like.
Recipe adapted from Beth’s Summer brunch menu

1 egg white
3 heaped tablespoons of honey
1 tablespoon of dark brown sugar
2 cups of cooking oats
1/2 cup of chopped hazelnuts
1/4 cup of chopped almonds (or assorted nuts of choice)
Handful of chocolate chips (optional)
Whisk the egg white, honey and brown sugar gently in a large mixing bowl. Add the oats, chopped nuts of choice and mix well. Spread this mixture on a baking tray and bake for 10-12 minutes at 180 degree celsius.
Keep stirring the mixture every 3-4 minutes with a spatula to avoid burning the granola. Once done, let the granola cool and transfer into air tight containers.
Spread over yoghurt and serve with berries or a drizzle of honey.
