It is touching 41 degrees Celsius in my side of the world this week. That means we do not need an oven to bake cakes. Just make the batter and throw the tray in the balcony.
Yes, it is officially peak summer here and I cannot think of anything apart from several glasses of refreshing lemonade.
So here I am, presenting you this beautiful ruby red strawberry lemonade to bid adieu to season’s last strawberries (SOB). As an afterthought, I might add a dash of white rum or vodka to make this a super sexy Sunday brunch cocktail. SLURP.
Dear Summer, bring it on I say!
Juice of 6-8 medium lemons
5 tablespoons of sugar
Fresh mint leaves
Ice to serve
1 litre of chilled water
In a blender add the strawberries, 2 tbsp of sugar and puree until smooth. In a mixing bowl, mix the lemon juice and sugar and stir till the sugar is dissolved. Add the strawberry mixture to this. Add the chilled water and mix in the ice. Serve with lemon wedges and fresh sprigs of mint.
You can store the syrup in a jar and make the lemonade later and adjust the quantity of water accordingly.
